1. Technology overview
Ecovative is a US biotechnology company based in New York that grows food and materials from mycelium, the root structure of fungi. It grows mycelium sheets on wood chips and other plant material, and has transferred its process to partner mushroom farms in Pennsylvania. Its spinout MyForest Foods turns these sheets into MyBacon, a mycelium-based bacon alternative. Ecovative is developing Forager, a mycelium textile, with fashion and electronics brands, and its technology has also been used for mycelium packaging. The company offers contract fermentation and biomanufacturing services, including pilot batches in configurable growing chambers.
