Mycelium Protein Ingredient (Viando)

Pacifico Biolabs is a German food-technology company founded in 2022 and based in Leipzig. It makes meat alternatives from fungal mycelium and supplies the protein to food manufacturers, meat processors and foodservice, aiming to replace animal meat with a clean-label ingredient.

Sugars are fed to fungi in steel fermentation bioreactors, and the company is scaling production through standard brewery tanks instead of purpose-built reactors. The first product, Viando Chicken, is a 1:1 chicken replacement with up to 30% protein, with Viando Pork and Viando Fish announced as coming soon.

Meat processors and food brands are seeking fermentation-based proteins with meat-like texture to build hybrid and plant-based lines. The May 2026 Series A reflects investor interest in using idle brewery capacity to cut scale-up cost, a model relevant to Southeast Asia's large brewing and fermentation capacity.

Founded November 2022 by Zac Austin and Washington Logroño, HQ in Leipzig, Germany. Series A of 7 million EUR reported 27 May 2026 with Stray Dog Capital, TGFS, Sprout & About Ventures, Simon Capital, FoodLabs and a regional brewery partner.
